However, … WebbMy shaping method for this loaf is "SEWN and Stitched". I do a south/east/west/north stretch and fold followed by a gentle stitching. Then I roll it over and give it one scooch with the pastry scraper , leaving it on the bench for 30-60 seconds so that the seam can seal up. If the dough is too tight I don't stitch since it might tear.
